"Bible" Stew

3/4 cup lentils
1/2 cup barley
3-5 stalks of celery
3-5 carrots
1 large onion
Low-sodium Chicken Stock (1-2 boxes)
Fresh Spinach or Kale
rosemary, cumin, garlic powder, pepper, salt (to taste)

Saute the celery, carrots, and onion. Add to soup pot with all other ingredients (except for spinach or kale). All herbs/spices to taste. Bring to a boil, reduce heat, then simmer for 45 minutes. Add spinach or kale, simmer for 15 more minutes. Serve.

I love this soup, and it's good with flatbread. I try to keep sodium use to a minimum by using no-salt stock, but my family usually adds a little salt to their servings.

    I don't see any bible in the recipe. Is it just for garnish?

    You would get more fibre if you shreadded it and added it to the stock during cooking. :tongue:
