Cheaters Taco's

So I really love cooking, and I always try to make up new low calorie and low fat foods. This is one that I came up with and is perfect for people who love eating tacos, and are trying to watch your intake (duh, you're on this site aren't you? :p ) then try this recipe out.

Makes two 1 cup servings (double the ingrediants to serve four)
4 skinless boneless chicken tenders (2 for each person)
1/2 cup cherry tomatoes, quartered
1/3 c shredded carrots
3 garlic cloves, minced
1 packet Taco Seasoning Mix Components
As much or as little water as you want, depends on how saucy or thick you want it.

Boil the chicken in water until done. Drain and let cool. Shred with two forks when cool enough to handle. In a seperate pan, spray with no calorie cooking spray. Put minced garlic and sautee for 1 minute, stirring frequently. Then put the cherry tomatoes and carrots and sautee until both are soft and the tomatoes are giving off juice. Add the shredded chicken and let the juice of the tomatoes and garlic penetrate the meant, about 3 minutes. Add the desired amount of water, and the contents of the taco seasoning packet. Cook on low for 10 minutes. Enjoy.

Now keep in mind, what you add to these tacos is going to add more calories. I use 2 super stuffed taco shells (130 cals for both), shredded low fat cheddar cheese, no fat sour cream, and iceburg lettuce.
