I was lookin for some ideas too...which is how I came acrossed this! One thing that I tried just recently were chiken kabob fajitas!! First I marinated the chicken in a caribbean jerk marinade, then I scewered that along with green peppers, red peppers, yellow peppers, orange peppers, white onion, and jalapenos. then I sprayed the whole scewers with olive oil spray and sprinkled with fajita seasoning. Grilled em on the BBQ until the chicken was cooked, grilled some "healthy" tortillas until browned and "emptied" a few skewers along with some fat free shredded cheese and fat free sour cream...and voila'!!

My mum used to do yoghurt marinated chicken on the BBQ. I think it was, basically, chicken breasts cut in to strips and threaded on to skewers marinated in yoghurt with lemon juice and various herbs and spices (kinda make it up to your taste), marinade for a few hours then straight on the BBQ - they were yummy and low fat/cals if you use low-fat yoghurt.

I also like King prawns (shrimp) marinaded in lime, chilli, olive oil and coriander.

Another one...part boil small potato cubes, drain then put in tin-foil parcels with a knob of butter, garlic salt and black pepper then thrown them on.

Easy! Steaks! Juicy and yummy without having to add anything. BBQ some thin pumpkin and haloumi cheese slices and mix it up with some lettuce mix. Bang! A yummy low carb dinner/lunch.

    or

Marinate some prawns in olive oil, garlic and chilli. Chuck them on! Serve with Greek Salad.

    or

Marinate chicken fillets in soy, sweet chilli, honey, peanut oil. Serve with toasted walnuts and green salad.

    or

Whip up some skeweres with beef/lamb, pineapple, red capsicum (peppers) and mushrooms. Serve with salad.

BBQ's are easy! Summer means salads and just add a protein! I live in Australia so we BBQ 9 months of the year!! =)
