In search of a sauce for

Butternut squash ravioli.

I'm having this for dinner tonight but don't want a red sauce or anything too heavy that will mask the tast of the ravioli.

Any suggestions please?

    A bit fattening - but you don't need much. Brown Butter Sage sauce is my favorite for butternut squash ravs.

    Yes to bechamel or brown butter sauces. Both are *perfect* with butternut squash ravioli.

    You could also cook the ravioli in stock and serve with just a little bit of stock and a light shaving of parmesan and cracked black pepper.

    You could substitute Smart Balance for the butter?

    A sage brown butter sauce is the classic pairing with a little Parmesan. The nice thing is that a little goes a long way. A red sauce would kill it.

    Follow package directions to cook your ravioli.

    Slice fresh mushrooms and chop some onion. Saute in a tablespoon olive oil.

    In a small bowl, whisk together
    1/2 c Fage 0% Greek yogurt
    1/2 c low sodium chicken broth
    1/4 c grated Parmesan cheese

    Add to mushrooms and onions. Heat until warm ( will curdle if too hot )

    Drain ravioli and combine with sauce Toss to coat.

    You could use fat free sour cream instead of the Yogurt but the taste will be bland.

    Well most of the time I do try to mke from scratch......but this time its store-bought. :blushing: Rising Moons Organics is the brand. I haven't had theirs before but I love pumpkin/butternut squash ravioli so I'm sure theirs will be good!

    A little really does. Its just me eating this so I usd 1TB of unsalted butter and there was butter left over.

    I LOVED this whole dish, it was amazing! I can not wait to make this again :love:
