A bit fattening - but you don't need much. Brown Butter Sage sauce is my favorite for butternut squash ravs.

Sossy love, anytime! I am a true foodie! lol0 -
Yes to bechamel or brown butter sauces. Both are *perfect* with butternut squash ravioli.
You could also cook the ravioli in stock and serve with just a little bit of stock and a light shaving of parmesan and cracked black pepper.0 -

You could substitute Smart Balance for the butter?0 -
A sage brown butter sauce is the classic pairing with a little Parmesan. The nice thing is that a little goes a long way. A red sauce would kill it.0

Follow package directions to cook your ravioli.
Slice fresh mushrooms and chop some onion. Saute in a tablespoon olive oil.
In a small bowl, whisk together
1/2 c Fage 0% Greek yogurt
1/2 c low sodium chicken broth
1/4 c grated Parmesan cheese
Add to mushrooms and onions. Heat until warm ( will curdle if too hot )
Drain ravioli and combine with sauce Toss to coat.
You could use fat free sour cream instead of the Yogurt but the taste will be bland.0 -
Thank you, these all sound great!0

Well most of the time I do try to mke from scratch......but this time its store-bought. :blushing: Rising Moons Organics is the brand. I haven't had theirs before but I love pumpkin/butternut squash ravioli so I'm sure theirs will be good!0 -
