anyone have any good recipes for cold chicken pasta salad?

    I'd like some cold chicken pasta salad recipes, too!

    I do have a great Asian-style pasta salad made with flank steak. I know it's not chicken, but flank steak is really lean, too. It's modified from a Cooking Light recipe I saw. You can check it out here: http://www.flickr.com/photos/labimposter/3340987207

    I like cold chicken pesto:
    Grill the chicken breast and shred, cook up some wholewheat pasta twists. Drain & mix together, add acouple of spoons of red pesto and some diced up cucumber and tomatoes once cooled.

    If you like it hot, you could add some peppers instead of cucumber & tomatoes and mix it all in while warm.

    I have a recipe for cold chicken caeser pasta salad made with whole wheat penne that's under 300 calories, very simple and yummy in the summer.

    Whole wheat pasta
    Ken's Fat Free Caeser Dressing
    Grilled chicken breast
    Fat Free Croutons

    Then top with whatever veggies you would throw in a salad. If I'm serving for a brunch or lunch I like to put it on romaine lettuce.
