High Calorie Days

For those of us that zig zag our calories, I am curious...

On your high calorie days, do you burn a ton of calories, eat them plus your daily allowance plus more?
I have been having low days and high days. On my low days, it's usually a low day because its a easy workout day so I only burn around 200 cals and so I generally eat my daily allowance of about 1500-1600 cals. On my high cal days, I will burn between 800-1000 calories, eat my daily allowance and than the majority of my exercise calories so I end up eating around 2100 cals. But will that really trick your metabolism since we are told to eat what we burn? I was wondering if anyone can give me some advice. I am thinking about having my high calorie days on the days that I work out less so I would technically be over my daily allowance by 500 or so. I was losing large numbers every week by zig zagging but now I have hit a short plateau and am anxious to get my last 10 lbs off. I would love to hear thoughts on this and if you think it would help jump start another loss for me?

    My MFP regular goal is 1440. My zig zag schedule is:
    M-1200
    Tu-1200
    Wed-1940
    Thurs-1200
    Fri-1400
    Sat 1200
    Sun-1940

    These are all NET calories. I exercise 1 hour a day except for Sat which is my rest day. I eat all my exercise calories, so on my high days I end up eating about 2100-2200 calories (1940 net). What is your normal goal & your zig zag schedule?

    3-4 lbs a week for the majority of the last 4 months for a total of almost 50 lbs.
