I just found a few recipes that I thought I'd share with my wonderful MFP's.
For those that are having a hard time thinking of ways to mix up your lunch menu!
Smoked Salmon Bagel
1 Bagel
1 Tbsp low fat soft cheese
1 Slice of smoke salmon
Serve with salad and fat-free dressing. Plus 1 apple and a handful of grapes.
Mozzarella, Tomato, and Avocado Salad
1 Small Avocado
1/2 Small ball of reduced fat mozzarella
1 Tomato sliced.
Arrange with fresh basil, black pepper and balsamic vinegar. Plus 1 kiwi fruit.
Avocado Dip and Pitta Bread
1 Small Avocado
1 Deseeded Chopped Tomato
A little Lemon juice
Tabasco and Garlic to taste
Mash all the above together and serve with 1 Wholemeal Pitta bread and vegetable crudites.
Spicy Tuna and Bean Pitta
1 Wholemeal Pitta Bread
1/2 Can Tuna in water
2 Tbsp Red Kidney Beans
Chilli sauce to taste
Serve with salad and fat-free dressing. Plus 1 pear.
Veggie Omelette
2 Eggs
1 Tbsp Skimmed Milk
3 Tbsp Sliced Mixed Peppers
1 Tbsp Reduced fat cheddar cheese
Handful of spinach
Make Omelette with a spray of oil, serve with salad and 5cm granary stick or small roll.
Hummus and Pitta Bread
1/3 Large Tub reduced-fat Hummus
1 Wholemeal Pitta bread
Vegetable crudites
Plus 1 kiwi fruit.
Roast Beef and Tomato Sandwich
2 Slices wholegrain bread
1 Slice lean Roast Beef
Scrape of Horseradish sauce
1 Tomato
Plus 1 peach, 1 small pot fat-free natural yoghurt and a handful of raspberries.
Oriental Salad
Salad of Bean sprouts
Avocado
Red Peppers
Brocolli Florets
Extra Virgin Oil and grated fresh ginger.
Plus 100g grilled chicken breast, Large slice of cantaloupe melon and handful of srawberries.
Beetroot Super Salad
Beetroot and Red Onion Salad
Small Can of Sardines, salmon or mackerel in olive oil.
3 Rye crackers
Cheese and Crackers
5 Rye crackers
Small piece of Brie
2 Sticks of celery
1 Orange and a handful of red and green grapes.
I hope these above ideas help some people to experiment with their lunches!

Also adding this one -
Houmous Ham wHolemeal Wrap! (inspired by the Biggest Loser)
Saute some red onion and mixed peppers in a pan with light spray for about 5 minutes
Get a wholemeal wrap (Discovery wholemeal wraps are only about 110cals in the UK) and heat either in the microwave for about 10-30 seconds or oven until warm (but not cooked)
Smear about 20g of homous on the wrap
Tear a couple of ham slices and place on the wrap
Add the sauteed veg, wrap it all up!
Serve with a side salad and a couple of drops of lime juice and pepper to season the salad.0 -
