Rachael Ray's "You won't be single for long" Vodka Cream Pas
1tbsp extra virgin olive oil
1tbsp butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 32 oz can crushed tomatoes
salt and pepper
16 oz pasta, like penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn
Heat a large skillet over medium heat. Add the olive oil, butter,garlic, and shallots. Gently saute' the shallot mixture for 3-5 minutes to develop their sweetness. Add the vodka and simmer for 2-3 minutes till the vodka reduces by half. Add chicken stock and tomatoes, bring to a gentle boil, stirring constantly, and reduce heat to a gentle simmer. Season with salt and pepper.
While the sauce simmers, cook pasta in salted water till just done, Stir cream into the sauce, and bring back to a gentle boil then remove from heat, drain pasta, toss with sauce and basil leaves.
