I have posted a few on my blog...
Stuffed pasta shells (all sorts of veggies, 1/2 c cottage cheese, half a roll of sausage cooked mixed together, stuff in pasta shells, layer in a baking dish, put low calorie alfredo sauce below and on top of the shells, top with parmeasan cheese and italian seasoning)
I made southwestern bean burritos last night, (chicken, lots of different kinds of beans garlic, Veggies GALORE a little taco seasoning cooked in a crock pot all day and then put in a taco shell!)
I also like Pork chops grilled, with chopped veggies and apples on top, to make the veggie topping cut up all your favorite veggies, add lemon, olive oil and vinager, a few seasonings and mix together, top on the pork chops. YUMMM
Cauliflower mashed potatoes is great!
Baked sweet potato eaten like a regular potato is good
Rice and beans with corn mixed together is really good with salsa for flavoring..
Fry peppers and onions and grill some steak, have steak fajitas without the tortilla or with,
Fry peppers and onions and celery with pineapple, and grill some chicken, make a sweet and tangy marinade and top on the chicken (think orange chicken)

Just get creative! Anything you usually make with ground beef use ground turkey or chicken instead. Mix it up with fish, shrimp, chicken, ground turkey, ham. The website sparkrecipes has some great healthy recipes too!0

how about some jerked pork tenderloins?
1bunch green onions. cut into 1inch pieces
3 bay leaves broken into pieces
3 garlic cloves, peeled
2 chopped jalapino chiles. seeds and membranes cut out or it will be real hot
2 tablespoons distilled white vinegar
1tablespoon dried thyme
2 teasppons ground allspice
1 teaspoon salt
1/2 teaspoon coarsely ground black pepper
2 whole pork tenderloins (1 pound each)
1 large or 2 small ripe pinepples
in food processor with knife blade attached, blend green onions, bay leaves. garlic, jalepinos, vinegar, thyme, allspice, salt, and pepper to a thick paste
on a large plate, rub tenderloins all over with the paste. cover and refrigerate 1 hour or over night
prepare charcoal fire or preheat gas grill for covered direct grilling over medium heat. or you could just bake it in a 350 degree oven for about 45 minutes to 1 hour depending on your oven.
meanwhile with sharp knife cut pineapple lengthwise through crown to stem end into eight wedges , leave on the crown, if small pineapplese cut into 4 wedges
place tenderloins on hot grill rack. cover grill and cook turning once until brown on the outside and still slightly pink in the center (155 degree temp.) 18 to 20 minutes. when done let pork stand for 5 minutes. while tenderloins are cooking add pineapple wedges to the grill cut sides down. turning once. cook for 4 minutes on each side.
transfer pineapple to platter. transfer tenderloins to cutting board and thinly slice. each serving of pine apple and tenderloin together is 172 calories, 23 g protein. 11 carbs, 4g fat, 1g sat fat, 1 g fiber, 70 mg cholesterol. 347 mg sodium0 -
