My "I have no food in the house" dinner.

My daughter has a friend over and so this evening they begged me for pizza for dinner. Sigh... been here and done this before
So we go and pick up pizza - crappy Little Caesars cheese pizza at their request - and the whole drive home I'm smelling that thing and thinking what am I going to eat for dinner, what am I going to eat for dinner?! I have nothing in the house worth eating right now. Wish I'd gone to the grocery store earlier, aaagh!
So... here's what I whipped up: I had bok choy and some cauliflower in the fridge, a wee bit of garlic too. I heated a tablespoon of olive oil and the garlic, then stir-fried the bok choy and cauliflower. Then, sensing this would be a little bland, I found some salsa in the fridge and dumped some of that in too. A squeeze of fresh lime and a pinch of kosher salt, and here's my "I'll be damned if I'll eat cheese pizza tonight" emergency meal:
223 calories, 18 carbs, 14 fat (the olive oil). And it was big and steamy hot and it wasn't pizza.
My point? If I can resist, anyone can. I'm not saying I'll be able to resist every time, but tonight I did. Probably because today is my "new start" and I'm feeling motivated. My other point? There's always something better to eat than crappy pizza, even when you think you have nothing to eat in the house. And if there's not, set yourself up so there IS, so that with just a few ingredients you can cook something up! I'm trying to fix the way i eat. This was a good start.

It looks pretty darn yummy! I am finding that if I keep my spice pantry well stocked then I can always find SOMETHING to eat.0
