Cheesy Beef Enchiladas

Cooking Time: 20 minutes

Ingredients:

1 pound(s) uncooked lean ground beef ( with 7% fat)
16 oz Taco Bell Home Originals Thick"N Chunky Salsa( can substitute), Mild, divided
1 1/2 cup(s) Kraft Shredded 2% milk reduced fat sharp cheddar cheese
12 medium flour tortilla(s), 6 inch

Instructions:

Heat oven to 350 F. Brown meat in large skillet; drain/return meat to skillet.
Stir in 1/2 cups of each salsa and cheese. Spread 1/2 cup of remaining salsa onto bottom of 13x9 inch baking dish. Spoon meat mixture down centers of tortillas; roll up. Places, seam-sides down; in baking dishl top with remaining salsa and cheese. Bake 20 minutes or until heated through.

    sounds really good! i'm going to have them for my dinner tomorrow. my boyfriend claims to 'not like' healthy food, but i think i could trick him inot eating these!
