I made this earlier and some folks were interested so here it the recipe. Really simple and fast!
Ingredients:
4oz Boneless Skinless Chicken Breast
2 tbsp Philadelphia Cream Cheese 1/3 Fat Garden Vegetable flavor
3 cups (85g) baby spinach
(Laughing Cow cheese wedge in Garlic & Herb can be used as an alternative to the Philadelphia cream cheese to cut down on the calories but the sodium is higher.)
Preheat over on 350 degrees. Split chicken breast open being careful not to cut chicken entirely in half. Set aside. Chop baby spinach until it is chopped into smaller pieces, not to fine and cook it in a pan until the spinach is really tender, you can use a cooking spray or oil of your choice to to keep spinach from sticking, then add the Philadelphia Cream Cheese 1/3 Fat (Garden Vegetable flavor) to the pan and melt and mix with the spinach. Once it's melted together stuff the mixture inside of the split uncooked chicken breast, season chicken breast to taste then wrap in foil and bake until chicken is done, in my over it was 20 minutes.
214 calories, 30g protein, 5g carbs, 2g Fiber, 2g Sugar, & 328 Sodium
