This is another good one for fish or chicken:

1 or 2 fillet of fish, I used Tilapia
2 tomatillos, chopped
2 tbs Franks Red Hot sauce
1/4 cup chopped onion
juice of one lime
2 or 3 slices of lime

saute (or bake with pam) tomatillos, onion, lime juice, and lime slices until soft in about a Tbs of vegetable oil. Add fish, cook until done.
