Quick Italian Spinach Pie

This is so easy to make and is good for any meal of the day really. My girls liked it a lot too.. bonus!!
1 container (16 oz.) 2% Cottage Cheese
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese
4 eggs, lightly beaten
1 jar (7 oz.) roasted red peppers, well drained, chopped
1/3 cup Grated Parmesan Cheese
1 tsp. dried oregano leaves
PREHEAT oven to 350ºF.
Mix all ingredients until well blended.
POUR into greased 9-inch pie plate.
BAKE 40 min. or until center is set.
nutritional information per serving/ Serving size is 8
Calories 150 Total fat 8 g Saturated fat 4 g Cholesterol 125 mg Sodium 450 mg Carbohydrate 6 g Dietary fiber 1 g Sugars 2 g Protein 15 g Vitamin A 50 %DV Vitamin C 4 %DV Calcium 25 %DV Iron 6 %
