Low Calorie Manicotti

Here is my recipe for low calorie Manicotti. I hope you all enjoy it!
Manicotti Pancakes
Ingredients:
1 cup all purpose flour (I imagine you could use whole wheat flour as well... you just might have to adjust the moisture)
1 whole egg
2 egg whites
1 cup fat free milk
Method:
Mix together ingredients and pour just under 1/4 cup of batter into a heated and sprayed frying pan. Rotate frying pan in a circular motion until batter coats the pan evenly, as you would when making crepes (which these basically are). Cook until the edges just begin to lift, a minute or two, then carefully flip and continue cooking another minute or two. Set aside to cool. Repeat with the remaining batter.
Should make 12 pancakes, 50 calories each.
Manicotti Filling
Ingredients:
2 cups fat free cottage or fat free ricotta cheese (I figured the calories using fat free cottage cheese)
2 egg whites
1 cup sliced fresh mushrooms
1 cup baby spinach leaves
1/4 cup chopped fresh parsley
1/2 tsp. dried ground basil
1/4 tsp. garlic powder
1/8 tsp. ground cloves
3 cups spaghetti sauce (I used Hunt's garlic and herb)
1 cup part skim milk, low moisture shredded mozarella cheese
12 servings at 79 calories per serving.
Method:
Preheat oven to 350 degrees and spray a 9 x 13 baking pan.
Combine all ingredients except spaghetti sauce and mozzarella. Use enough filling to evenly fill each of your manicotti pancakes with none left over and roll the pancakes up. Pour 1/2 cup of the spaghetti sauce in the bottom of your pan, tipping pan to coat the entire bottom. Place the manicotti rolls into your pan and cover with the remaining sauce. Sprinkle the top with the mozarella cheese and bake for 30 minutes. Let cool a few minutes and then enjoy!
129 calories for one assembled manicotti.

Really? I never knew that and I use whole wheat flour only. I presume it would need more moisture since more wheat/grains = more dry?0 -
yes, I've found whole wheat flour to require more moisture when I've used it.0

Okay, so I made these myself tonight. I forgot the whole egg in the pancakes, and they turned out just fine. So I guess there's a few more calories eliminated there (this made the pancakes 44 calories each instead of 50). As for the filling, I used 1 3/4 oz. dried ****ake mushrooms (rehydrated), added 1/4 cup part skim, low moisture mozzarella cheese, and reduced the sauce to 1 1/2 cups. I also didn't have any basil, so that was left out too. Although I normally would have still used it, had I had it. That being said, my changes kept the filling at 79 calories per serving, So they were 123 calories each. Not bad! :happy:
All in all, they tasted pretty good. Perhaps a bit lacking in the salt department, but salt isn't really all that good for us. Otherwise, not too shabby. Some of you might prefer a bit more sauce, but since these are so low in calories you really could add more without doing much damage. Also you could add chicken or some other meat if you want. The possibilities are endless!0
