Sriracha Apple Chicken Sausage Sweet and Sour Stir Fry

Johnsonville Sausage has a few new products on the mark, one of which is a Apple Chicken Sausage. On Johnsonville's website the only recipe which is a Sweet and Sour Stir Fry, I decided to make the recipe tonight but added a hint of heat with the Huy Fong Sriracha Hot Chili Sauce. The outcome was very good and had just a little heat.
Prep and cool time: 30 minute
Serves 5
3.75 Cup brown or long grain white rice (i used white rice)
8 oz can Dole Pineapple Chunks
16oz frozen stir-fry vegetables
1 Tbsp canola oil
1 Pkg Johnsonville® Apple Chicken Sausage, sliced
1 Tbsp cornstarch
1/3 cup cold water
2 Tbsp Kikkoman reduced-sodium soy sauce
1 Tbsp C & H - Pure Cane Sugar - Golden Brown
1 Tsp Huy Fong Foods - Sriracha Hot Chili Sauce (optional, if you want the hint of heat)
Cook rice according to package directions; set aside.
Drain pineapple; reserve pineapple chunks and juice.
In a large skillet, sauté vegetables in oil until crisp-tender.
Add sausage and pineapple chunks; cook and stir until heated through.
In a small bowl, combine the cornstarch, water, soy sauce, brown sugar, Sriracha and reserved pineapple juice.
Stir into sausage mixture. Bring to a boil. Cook and stir for 1 minute or until sauce is thickened.
Serve over ¾ cup rice.
