Need Chef/Cook/Food Addict Help!!

Hi Friends! I LOVE to cook - but feel as though I always cook the same thing. I'm one of those people that can eat the same thing every day and not get sick of it if I love it :) .... anyways, does anyone have any meal ideas to cook for my family tonight? I'm cooking for 5 people (Parents, Picky 17 y/o brother, boyfriend, and self) ... We enjoy fish (not FISHY tasting fish but salmon, mahi, etc.. and meats of sorts) .... any Ideas are greatly appreciated!

    Lasagna,
    Homemade pizza
    Chili with cornbread
    Salad with whole roasted salmon (or grilled filets)
    Shrimp en papilliot (or any fish, wrapped in parchment with veges roasted in the oven, served with pesto potato salad)
    Quesdillas
    Salmon (any fish really, or meats ie chicken, pork) on a bed of stir fry veges with rice

  • 1.) lean steak or chicken stir fry with brown rice.

    2.) grill salmon packs- take a piece of foil, spray with pam spray, skin side down, rub with 2 tsp olive oil, lemon pepper, a pinch of salt, squeeze fresh lemon on it, fresh dill, put slice lemons on top (remove after cooking), and finally two strips of bacon (just for flavor, not to eat). close foil pack tightly, poke holes and grill until fish is flaky. Serve this with rice pilaf and steam mixed veggies.

    3.) Pork loin, smashed sweet potatoes, toss salad

    4.) Turkey lasanga

    5.) spaghetti and turkey meatballs (kids wont know its turkey)

    6) crock pot veg beef soup

    Oh, you need to make fish tacos. Hands down.

    The recipe I used most recently was from Cooking Light, I think it was in the March issue. Anyway, you can google "Cooking Light's Blackened Tilapia Baja Fish Tacos" and find the recipe. Someone from MFP has even already entered it into the food database!

    Some side options:

    Spanish Rice
    Bean, Corn and Tomato salad
    Cabbage slaw (made with oranges, scallions and a vinaigrette - not mayo)
    Roasted corn on the cob

    And for dessert I would do something cool and refreshing - maybe lime or watermelon sorbet?

    Good luck - cooking is such a blast! And it's a great way to show people how much you love them.

    Cooking Light Blackened Tilapia Baja Tacos

    YIELD: 4 servings (serving size: 2 tacos)
    TOTAL: 20 MINUTES
    COURSE: Main Dishes

    Ingredients
    1/4 cup reduced-fat sour cream
    2 tablespoons chopped fresh cilantro
    2 tablespoons fresh lime juice
    1 jalapeño pepper, seeded and chopped
    1 cup thinly sliced white onion
    1 1/2 teaspoons paprika
    1 1/2 teaspoons brown sugar
    1 teaspoon dried oregano
    3/4 teaspoon garlic powder
    1/2 teaspoon salt
    1/2 teaspoon ground cumin
    1/4 teaspoon ground red pepper
    4 (6-ounce) tilapia fillets
    1 tablespoon canola oil
    8 (6-inch) corn tortillas
    1/2 ripe peeled avocado, thinly sliced
    4 lime wedges

    Preparation
    1. Combine first 4 ingredients in a food processor; process until smooth. Combine jalapeño sauce and onion in a small bowl.

    2. Combine paprika and next 6 ingredients (through ground red pepper); sprinkle evenly over fish. Heat oil in a large cast-iron skillet over medium-high heat. Add fish to pan; cook 3 minutes on each side or until desired degree of doneness.

    3. Warm tortillas according to package directions. Divide fish, onion mixture, and avocado evenly among tortillas. Serve with lime wedges.

    Oh my goodness! Thanks for the recipes everyone!! Fish tacos sound sooo tasty and same with some healthy lasagna!!! I love cooking so I'll definately be trying all these out !!
