wine calories when cooked in recipes?

Hi all - I have just made a lovely slow-cooked boeuf bourgignon-ish dish (cannot adhere to the discipline of a recipe for love or money!), and I wonder - if I include my recipe & the 1 cup of wine in it, do the calories from the wine remain, or do they evaporate with the alcohol? How would I calculate the calories in my recipe in this case?

    Huh.. interesting.. I would think some of it evaporates. Waiting to hear other responses.

    I just saw this topic covered on the PBS show "America's Test Kitchen". If left uncovered, roughly 90-95% of the alcohol cooks out, but left covered, in a slow cooker, only 60% or so gets cooked out.

    I always include the wine calories in my dishes. It's your best bet when things are unknown.

    Even if all or most of the alcohol cooks off, I'm not sure that all of the calories are in the alcohol. I cook with wine a lot, and I'm not as good about calculating that as I should be. If you are entering the recipe, I think you should include the calories from your 1 cup of wine, and remember that it isn't going to add a large number of calories per serving. Just my two cents worth...

    yep, all your comments are basically what what I think, too. It's better to err on the side of more calories than less. Thanks, y'all (although I'll still be interested to know if anyone "knows"). :-) L

    All the calories from wine come from alcohol. There are only trace amounts of protein and fat.
