Eggs, How do you like yours? I eat one a day and am looking for some new ideas.

Here's what I do often:

HB with a bit of dijonnaise (mash together) on toast
Poached over rice or potatoes
Fried in a breakfast sandwich

Also, any ideas on cooking eggs for a week in advance (besides HB'ing them)?

    Scrambled with some diced jalapenos.
    Omelette with diced lean meat of your choice.
    I like salsa or fresh diced tomatoes on either of those listed above.
    Lately I've been mixing a little whole grain pasta or rice with the scrambled eggs when I am coming up short on carbs.

    My favorite way to eat my eggs right now is over oatmeal. I cook up some plain oatmeal, spice it up with garlic/onion powder, salt, pepper and cayenne pepper sauce. I put the egg over top, then cut it up and mix all the yolk-ie goodness in with the oatmeal. It's SO good and keeps me full for hours. I grew up on eggs and grits so this is a great filling substitute for me.

    I make a scramble/omlette thing (almost an omlette :))
    I melt one slice of pepper jack and serve over fresh spinach and cover with a diced tomato. salt and pepper. awesome.

    Make mini crustless quiches!! I love doing that -- I bake about a dozen and then eat two or three.

    I like scrambled eggwhites with mild salsa and a few mushrooms. I fry the mushrooms in cooking spray first then add the eggwhites and a table spoon of salsa. I also add Mrs Dash and Cumin for more flavor =)

    I just scramble it all together!

    Im not a big egg person but Ive been trying to eat them more lately I like to Hard boil them then take out the yolks and put a
    tsp of hummus in them or put vinegar on them.

    I like to have one whole and one white, scrambled with a tbs of salsa. some times I'll add a 1/4 cup of shredded cheese.

    My everyday breakfast is an omlette of 2 eggs, 4 whites, 2 slices of Oscar Mayer precooked bacon (45 calories) and 1 ounce of cheese.
    Some day I add toast or another carb source.

    Fried eggs with Finlandia Light Swiss Deli cheese, Mushrooms and onions, dipped by the forkful in Buffalo wing sauce LOL! Yummmmmm!!!!

    scrambled. no milk or water to fluff them - just scrambled and pepper to garnish mmmmm

    I scramble one eggwhite and one whole egg...add a little pepper and hot sauce. After it's scrambled, I add a slice of cheese (gotta work on using only half, or using just a little of the shredded stuff)...and I put it on a thomas's mini bagel and tons of salsa. So yummy!

    I put an over easy egg between 2 pieces of toast (sandwich) and then cut it in half and the yolk runs all over... ummmm....yum!!

    My favorite is over easy, with the yolk runny

    But for a quick meal, I like scrambled

    And when I really want a treat, I make deviled eggs with ranch dressing instead of mayo

    Eggs in a bowl

    3 eggs (soft boiled)
    2 slices bread slightly toasted and buttered
    salt and pepper

    Tear toast up in a (good sized bowl)
    Crack and put soft boiled eggs in bowl
    salt and pepper
    stir
    Eat!!
    YUMMO!!

    OR
    Hard boiled eggs mashed on a plate with some balsamic vinegar and salt and pepper.

    OR
    Bacon/Cheese omelette

    sunny side up, atop 2 nice slices of asiago, atop a mound of herb risotto. probably not the best lo-cal choice, but it is how i like them:)

    I have been using a recipe found on weelicious.com

    I have one egg, one eggbeater, one tsp pesto. Beat together, cook in pan. Serve on toast with slice of cheese. It is really good....if you like pesto.

    I like to saute onions, mushrooms and asparagus (when it's in season) then scramble in 2 eggs and about an oz of sharp cheddar cheese.

    I also like shirred (baked) eggs. I use the toaster oven. Preheat to 350. Use a small ramekin and put in just enough olive oil or butter to cover the bottom. Toss in a pinch of salt and a minced garlic clove. Put the ramekin in the oven until the garlic is sizzling and fragrant. Pull the ramekin out and quickly crack two eggs into it. Sprinkle some dill over the top and bake till the whites are just barely set and the yolks are still runny. I eat it with toast. (adapted from a recipe in Ina Garten's book Barefoot in Paris)

    over-medium cooked with olive oil and some pan-roasted grape tomatoes--nice and simple in the morning!
