breakfast cookies!

I was looking for a way to eat my oatmeal on the run.
Here it is:
breakfast "cookies" (bonus: sugar free)
1/2 cup flour
1/2 cup quick oats
1/4 cup raisins (dried cranberries or apricots are also good. . .but chop up the apricots)
1/2 tsp baking soda
1/4 tsp salt
the following spices to taste:
pumpkin pie spice
cinnamon
1/2 cup unsweetened applesauce
1/4 cup cooking oil
1 med egg
1 tsp vanilla
Mix dry ingredients and dried fruit together, then add remaining ingredients. Mix to moisten. Drop by tablespoonfuls onto greased cookie sheet,
bake at 375 for 12-15 minutes
Makes one dozen, a serving is two cookies. You could add walnuts, but that would make the calories higher. (and the nutrition) They cook up slightly "cakey" not crispy like a cookie, just FYI.

I would increase the applesauce to 3/4 C and use 1/4 C egg beaters. These changes would further reduce the calories and have no effect on the flavor.0
