Healthy Breakfast?

Every Sunday I make brunch for my husband & our best friend before we go hiking.
In the past I'd make pancakes or waffle and bacon (and something better for myself).
I've finally convinced them to eat healthier for at least this meal (baby steps!)
As we usually don't have lunch these days I'm looking for something yummy & filling that the boys will enjoy.
Any ideas?

how about a big breakfast burrito? Eggs, turkey sausage, or bacon, green onions, chopped tomato, peppers, easy on the cheese, salsa and some lite sour cream (or the fage %0) on top0

I eat waffles and bacon for breakfast sometimes. I get those kashi waffles and sugar free syrup. I eat regular center cut bacon. Unless you are loading it up with butter and syrup, this seems like a good breakfast to get through a hike. Sometimes we just need to revamp the foods we like to something healthier. No need to ditch them alltogether.0

What about english muffin egg sandwiches and fruit salad with yogurt?0

scrambled eggs with mixed veggies in it is good. I add moroccan seasoning to it and it taste's great.
A lot of is just how you cook it ie. instead of fried eggs and bacon, poach eggs and cook bacon under grill. Heaps healthier.0 -
Egg beaters with turkey sausage & a little low fat cheese rolled up in a whole wheat tortilla! Filling with enough carbs & protein to keep you going for awhile.0

You could also have a bit of salsa to add more flavour.0 -
Maybe a healthier version of your regular breakfast? Make whole wheat waffles with applesauce subbed for some of the oil, topped with fruit instead of butter and syrup and a side of turkey bacon.0
