I have what seems to be a million RIPE bananans on hand.

Does anyone have any fit friendly banana recipes???

    banana icecream! slice the bananas into coins, freeze, throw in the food processor with a little peanuit butter and you have some awesome icecream

    Banana bread / muffins is my solution when the bananas on-hand get ahead of me, if I don't have time to bake it now the bananas will freeze just fine, the peel will discolour but that doesn't affect their usability :)

    I freeze some (without the skin) and put the frozen bananas in a blender with soy milk. It makes a delicious smoothie and you don't need ice that will water it down.
    You could also add a little honey for added flavor.

    Serves 6
    Ingredients
    For the sauce
    1 tablespoon butter
    1 tablespoon walnut oil
    1 tablespoon honey
    2 tablespoons firmly packed brown sugar
    3 tablespoons 1 percent low-fat milk
    1 tablespoon dark raisins or golden raisins (sultanas)

    4 firm bananas, about 1 pound total weight
    1/2 teaspoon canola oil
    2 tablespoons dark rum or apple juice

    Directions
    To make the sauce, in a small saucepan melt the butter over medium heat. Whisk in the walnut oil, honey and brown sugar. Cook, stirring continuously until the sugar is dissolved, about 3 minutes. Stir in the milk, 1 tablespoon at a time, and then cook, stirring continuously until the sauce thickens slightly, about 3 minutes. Remove from the heat and stir in the raisins. Set aside and keep warm.

    Peel the bananas, and then cut each crosswise into 3 sections. Cut each section in half lengthwise. Lightly coat a large nonstick frying pan with the canola oil and place over medium-high heat. Add the bananas and saute until they begin to brown, 3 to 4 minutes. Transfer to a plate and keep warm.

    Add the rum to the pan, bring to a boil and deglaze the pan, stirring with a wooden spoon to scrape up any browned bits from the bottom of the pan. Cook until reduced by half, about 30 to 45 seconds. Return the bananas to the pan to rewarm.

    To serve, divide the bananas among individual bowls or plates. Drizzle with the warm sauce and serve immediately.

    Unpeel them and freeze them. They last up to a month in the freezer. For a quick protein shake: take one frozen banana, one scoop of your favorite protein powder and 8oz. of milk blend it in a blender and enjoy :)

    One banana is 2 servings. Mash bananas and add equivalent of two serving dried skim milk and two servings of oatmeal. Mix up well and put in small loaf pan (2 1/2 x 5 I think) and bake at 350 for around 20 minutes. Ovens vary. When I had a gas stove, it baked faster than my electric stove. Let cool and you have two on the go breakfasts ready. If you have lots of bananas, just add the same equivalents and you can end up with several little loaves. When my kids were in school and never "had time" for breakfast, this was a great way to give them a nutritious start.

    Peel them, cut them up, splash a little lemon juice on them so they don't brown, and then freeze them in zip lock bags. Then you can use them in smoothie recipes or any other recipes that call for ripe bananas.
