A healthy office lunch, that is delicious too.

So, just because you are stuck in an office, and not going out to that calorie-filled lunch with everyone else because its friday (... jerks...) and you stayed behind because are trying to eat healthier.
And, just because you can not cook anything at all, because like me, you find making toast to be very difficult..
does not mean you can't enjoy tasty lunch..
Today I discovered this. What I call green pepper bowl microwave egg.
You will need
- a microwave
- a couple of eggs
- probably a fridge, plate, knife, fork.
1. cut the pepper horizontally anywhere above the half way mark. the higher up, the more stuff you can jam into it later.
2. clean out the seed parts, chop the top part up into pieces.
3. crack some eggs into the bottom part. mix in the chopped up top parts.
optional: add hot sauce, mustard, what ever to taste. Today, for me it was sweet with heat mustard.
4. place on a plate in the microwave. I use half power in 30 second increments. I guess this part depends on the microwave. I find the one we have here is horribly powerful and explodes egg yokes if i don't mash them up, and sometimes blows up the cooked egg part on full power when left in there too long. so you'll have to figure out the how your microwave works really.
hint: munch on the extra chopped up pieces of the top of the pepper that you couldn't fit into the bottom part while waiting for the thing to cook.
5. EAT.
I figure total calories (because this mustard is like 0 calories) is about 30 for the green pepper and 70 per egg. - So for me today this lunch was only 170 calories. Ill probably have some apples too.
But I was just so very happy that I was able to figure out how to make something yummy AND healthy (and cheap too really) at the office here, i had to share.

I'm sitting in the same boat right now. i was invited out to lunch by some friends here at the office but i knew that i was doing too good this week to loose it on a lunch that would equal my daily caloric limit. It's tough to say no, especially on Fridays... but I know it will be worth it in the end )0 -

I do microwave eggs sometimes, but I never would have thought to put them in a PEPPER! That is brilliant thinking!!! I am definitely going to try this one.0

I read this on the day you posted it, but just got around to trying it today. I used two eggs and after cooking I topped it with salsa. It turned out really good. I'll definitely will be adding this to my meal plans in the future.0
