i haven't used mine for more then chicken breast and burgers but using it for quesadillas sounds like a really good idea. I think i'll try that tonight.

2 la tortilla low carb soft shells 50 cal each
diced or sliced Chicken breast 100 cal
    sliced mushrooms
    spinach
    2 tbs salsa 10cal
1/2 cup 2% shredded cheese 45cal (per seving 1/4 cup)

I cook the meat and veggies together with the salsa then scoop into the shell. top with the cheese and bake for about 10 minutes. Not sure of the exact time on the george forman but just enough to harden the shell and melt the cheese. It ends up being about 300 calories total. you can add any veggies that you like.

I buy a rotissarie chicken and take all the meet off and then throw in a packet of taco seasoning with some water and 1/2 a jar of Salsa and shred the chicken while it is cooking. If it looks like it needs more liquid u can add more. I take some and spread it on some tortillas with cheese and then grill it. Top with FF or Light sour cream or greek yogurt (plain), lettuce, tomatoes and more salsa Or add what ever topping you like.

I also take a rotissarie chicken and take the meet and shred it then either I use just chicken and cheese for a quesidilla or we mix the chicken with BBQ sauce and grill it with some cheese. You can use many kinds of sauses and toppings, I think the possibilities are endless.

Another one I used to make was shreded zuchanni, salsa, black beans and shreded cheese that was yummy too.

    Have fun!!
