White Chocolate and Caraway Seed Muffins 115 cals

After rejecting many a low calorie muffin recipe because they just didn't taste 'right', I came up with these babies!

115 calories each and still taste satisfyingly cake-y!
2 cups plain/ all purpose flour
2/3 cup sugar
1 tbsp baking soda
1/2 teasp bicarbonate of soda
1 egg
1 tbsp yoghurt
1 tbsp buttermilk
3 tbsp butter (I used Lurpack spreadable Lighter)
70g white chocolate
1 tbsp caraway seeds soaked in...
1 cup milk
1/2 teasp vanilla extract
1) Sieve flour, baking soda, and bicarbonate of soda
2) Mix in with sugar
3 Mix in egg (beaten), yoghurt, buttermilk, vanilla extract, milk (with caraway seeds soaked in for 1-2 hours)
4) melt butter and chocolate
5) mix butter and chocolate into mixture
6) spoon into 15 cases and bake for 20 - 25 mins at 200C/ 400F
*edited about twenty million times to try and get the photo to work....sob!*
