Taco Mix - 280 cals - pics - VERY filling!

My husband and I looooooove tacos, :love: so I've been trying to find a lo-cal recipe and finally just decided to make my own. The hubby can't do without his flour tortillas, but I'm cool with eliminating the shell altogether and just eating the mix on top of some lettuce with a dollop of sour cream. I made a big batch of it, for us to eat for 3 dinners during the week, but you could cut down the portions, I'm sure. Below is the recipe and the breakdown of calories. Enjoy! :tongue:

2 lbs ground turkey - 1920 cals (I never knew how MUCH less in calories there are in turkey, instead of beef!!!) :noway:
2 cups salsa - 160 cals
1.5 cups corn (rinsed and drained) - 180 cals
1.5 cups black beans (rinsed and drained) - 330 cals
3.5 cups mushrooms (cubed) - 50 cals
1 cup green peppers (diced) - 25 cals
3/4 cup water - 0 cals
1/2 cup water - 0 cals

1. Brown ground turkey, drain if needed, and set aside.

2. Put corn, black beans, mushrooms, and green peppers in a pot with 1/2 cup water, cover and steam until green peppers are soft.

3. Drain veggies.

4. Combine veggies, meat, salsa, 3/4 cup water and simmer for 10 mins.

When I was done, I counted up all the cals above (2665) and measured it out. It came out to 9.5 cups, so.... 1 cup = 280 cals!

Combine that with 2 tbsp of sour cream (60 cals) and 2.5 cups of lettuce (15 cals), and that's a dinner of 355 cals!!! It doesn't get much better than that. :wink:
