Spicy poached pears

Hi, its autumn in NZ so that means pears!

6 semi ripe pears, peeled with stems left on...brown skinned variety are best eg bosch
2 cinnamon quills
1 tsp mixed spice
1 tsp ground ginger
1 tsp vanilla essence
2 star anise
1/2 cup brown sugar
1 cup of red wine or port
1 shot glass black rum (optional)
1 shot glass brandy (optional)
1 cup of water

in saucepan Bring the spice mixture up to heat and start to simmer, whilst this is happening start peeling your pears. Add them into saucepan carefully one by one and see how high the fluid level is. To cover the pears add extra water, or wine depending on your preferance, I like mellow flavour so I used water.
Bring it up to boil, then drop down to simmer for about 30-40 mins, you can test the pears with a fork if you like them firmer.

serve warm with vanilla ice cream.

    I for got to add once you have done with the pears pour in the rest of the bottle of wine and make a rockin mulled wine! just a thought!
