    brown rice (steamed in my rice cooker but you could do it on the stove or whatever) zucchini, green pepper, red onion (any veggies you like) seasoned with adobo spices. a 1/2 cup of brown rice with a ton of veggies + some salsa! yum!

    chicken breast plain - in teflon pan (10 min) or any kind of fish oven baked (20 min) or steak (broiled in oven 15 min)
    corn on the cob or small potatoes or whole grain rice (boiled plain 20 min)
    Salad: Romaine lettuce, tomatoes, mushrooms add dressing

    It seems I have a variation of this every day for lunch and dinner...

    Or a sandwich:
    Landsberg Muesli bread (high in fiber and filling), brie cheese and walnuts - yummie and healthy but high in calories!!
    Landsberg Muesli bread, smoked salmon, tomato – more healthy
    I get the bread from Wholefoods its fom Germany, like me, and I miss the bread!!

    Check out some of Harley Pasternak's books--the Five Factor stuff. His recipes are really simple but have 5 ingredients and are easy to fix.

    Veggie Faijtas

    1 Pepper
    8-10 button mushrooms
    1 onion
    1 tbsp olive oil
    1 tbsp chili powder
    Whole wheat tortillas
    Serves about 4

    Saute the onions in the olive oil and then add the mushrooms untill they are soft.
    Then add the chili powder (and I add chili flakes for heat) and then the peppers.
    Cook until the peppers are soft but crisp.

    Warm up the tortillas in the microwave for 30 seconds.

    I serve this with canned corn, guacamole, cheddar cheese and fresh tomatoes
    You can also add chicken, steak, or canned beans
    Sounds yummy!

    In the summer we're huge on using the grill. We're also really lucky to have a great butcher shop and fish market. The other night I took some thick pork chops and just put a bit of olive oil on them, salt, pepper and crushed rosemary and grilled them. I made rice and green beans to go along with it. Everything was great. I'll take Ken's Buffalo Wing Sauce and put it on chicken and grill it to make buffalo chicken. Pretty much every meal I just add one or two veggies and either rice or baked potato or baked sweet potato. One of my favorite fish "recipes" is to take tuna steaks that have been cut into about 1" squares (my fish market sells it this way) We skewer it with rosemary branches (I always have a ton in my garden) and drizzle with olive oil, salt and pepper and grill. It's SO yummy and not very fattening. It all seems more difficult than it is.
