Greek Salad with Lemon Dressing

1 medium unpeeled cucumber, thinly sliced
2 cups torn spinach
2 cups torn romaine lettuce
1/4 cup crumpled feta cheese
1 small red onion, thinly sliced and separated into rings
1 small can black olives, drained
2 Tablespoons lemon juice
1 Tablespoon olive oil
1 teaspoon sugar
1 teaspoon Dijon mustard
1/8 teaspoon pepper

Toss all salad ingredients in a large bowl. Put all dressing ingredients into a tightly covered container and shake until well mixed. Add dressing to salad and toss.

Makes 4 Servings
Serving Size: 8–10 ounces

    I have a recipe that's very similar only, instead of the sugar and mustard, I use garlic and a little red wine vinager. A Lebanese friend of mine taught it to me years ago and it's wonderful!
