Weight loss frustration

Hello all! I have been using the MFP app for a while, but just came to the forums for the first time a week or so ago. I was wondering if anyone might have some words of wisdom or advice for me.
I have been trying to lose weight since the beginning of March, and started using MFP at the beginning of April. All totaled I've lost maybe 12 or 13 pounds. I know this is great, and I am very happy, as I have more energy and I can fit into some clothes that I haven't seen in quite a while. My frustration falls mostly with the scale. Although I feel better, the scale seems to like to tell me differently. I do weigh everyday, which I know most people say not to do, but I really only log once a week to ensure the weight loss is real. It seems like every time I finally log a lower weight and am feeling really good, the very next day my weight is back up 2 pounds, and it take me 5 days or so to get it back down. I feel like I am in this never ending cycle of gaining and losing the same 2 pounds.
I am very careful about what I eat, but do not get as much exercise, as I recently hurt my ankle. I can't do much running normally (due to pins in my feet), but even walking is out for the rest of this week. Normally I try to do Zumba on the wii at least a week, and then either walk outside, or do the walking aerobic routines at home via ON DEMAND, as well as ab and back workouts. recently I tried upping my calorie intake to see if that helps, but no luck as of yet.
Is there anything else you can suggest or something that I am missing here?
