Turkey Rolls Lunchbox (425 Calories w/pic)
Today was something of a smorgasbord day. I had a lot of things in the fridge that needed to be used up and it turned out rather nicely for lunch!

8 slices Turkey Breast
2 wedges Laughing Cow Light Swiss
1/4 cup Baby Spinach Leaves
1/2 cup Red Seedless Grapes
1/2 Medium Cucumber
3/4 cup Long Grain White Rice, cooked & room temp
1/2 cup Mandarin Oranges
16 Green Beans
1/2 cup Broccoli
1/4 of a Red Bell Pepper
1/2 cup Garbanzo/Chickpeas
1 tsp Barbecue Sauce
2 tsp Shedded Cheddar Cheese
1 tsp Worcestershire Sauce
1 tsp Balsamic Vinegar
1 tsp Extra Virgin Olive Oil
Garlic Powder
Onion Powder
1 Sugar-Free Werther's Hard Candy
Trim the green beans, slice up the red bell pepper and chop the broccoli. Cook in a pan over medium heat. Add garbanzo beans, balsamic vinegar, olive oil, worcestershire sauce, onion powder and garlic powder to taste. Cook for about 10 minutes or until desired tenderness.
Spread the swiss cheese evenly over the slices of turkey breast. Add spinach and roll up.
Peel and slice the cucumber. Drain the manadrin oranges.
Place a sheet of plastic wrap into a small cup or mug. Fill with half the rice. Make a dent in the center of the rice and fill it with half the cheddar and bbq sauce. Cover the dent then close the plastic wrap around the rice, sealing tightly. Form the rice into a triangle shape. Arrange your lunchbox as pictured or to your liking. Enjoy!
