Cooking with olive oil?

If i'm cooking veggies in a tbsp of extra virgin olive oil, do i add it to my food diary as "1 tbsp extra virgin olive oil"? Do all the calories of the oil get absorbed into the food? How do you guys deal with what you've cooked your food in?

    I would add it in, personally.
    If you notice lots left over in the pan, maybe put down .75 of 1 tbsp on your food journal.

    I bought a spray pump at Williams Sonoma for oil. 15 bucks.

    I put 4 ounces in 2 months ago and still have 1/2 a bottle.

    That means I went from 1/2 a 16 oz bottle of EVOO a month to 1 oz in a month!

    It is natural and you pump it to get the pressure to spray.

    I love it!

    I would add it in. I have used the pumps in the past because you are not getting all the added junk from "Pam" type sprays, but now am using a Tbsp. of no salt added broth - usually works great because most good non-stick skillets don't need anything anyway.
