Delicious lunch-with "spicy mayo" yay!

So I've been eating the same thing for lunch for about a week now and I just wanted to share it with anyone because I REALLY enjoy it!! I found a way to have a good serving of protein and healthy carbs-since I usually eat lunch pretty soon after my workout. Its easy, delicious, and under 400 calories!
Katie Jo's spicy cucumber chicken sandwich!
1 or 1/2 (around 4oz)Baked chicken breast-only cracked pepper to season (no oil)...I usually bake about 6 chicken breasts at a time so that I can just reach into my fridge and grab one. Fast = best for me!
Cucumber (sliced thinly) around half of one
Non fat plain greek yogurt (I like brown cow natural)
Siracha Chili sauce
12 Grain Whole Wheat bread (I only use one slice)
So I found that mixing siracha with plain greek yogurt makes a VERY tasty spread (or dip!) and tastes very similar to spicy mayo, the kind you find at sushi places. Be careful with the siracha, a little goes a LONG way! I love spice so I used about a teaspoon but you can add/subtract to your liking. I only use a teaspoon or two of the greek yogurt and mix with siracha, then spread it on to one slice of 12 grain bread. I then line the bread with cucumber slices, add the chicken (after heating it up) and fold it in half. I eat more cucumber slices using the "spicy mayo" as a dip for my side. All together it is quick, delicious, and usually around 300 calories. I love different textures and the crunch of the cucumber pairs well with the chicken and soft bread!
When I am trying to avoid carbs (late at night) I can eat this without the bread and I use the cucumber as "chips" and then just put the yogurt and chicken on top. I love how well it goes together!! Hope you enjoy.
