newbie cant seem to reach my calorie goals

Hello all,

I am doing the body by vi challenge and I cant seem to reach my calories of 1500. I do two shakes a day, have my two snacks, and eat a semi healthy dinner, even when I dont eat a healthy dinner I dont reach my 1500 calories and I am not hungry. I have plateued in weight loss and I assume that is due to lack of calories, but I am stuck and not sure what to do.
