A non-leafy Salad

I made this Salad for supper tonight and it was a nice alternative to a leaf Salad (I just get tired of always eating those all the time) So here is what I did--I don't have mesurements, or know the caloric info--but here is a loose idea of what I did.

Maifun (rice sticks)
pre-cooked shrimps
cucumber
red bell pepper
pea pods
Aduki beans
a little soy sauce and Mirin to make a "dressing"

I prep-ed the rice sticks according the the package, thawed the shrimp, cut the veg, then tossed it all together--threw in a handful of aduki beans for good measure--drizzled on the soy & mirin--and ate away. The maifun has kind of a interesting texture and you feel like you can chew them forever. My kids loved it--I came across something like it in the WW mag (think it was like 3 or 4 points/serving) Like I said--nice change of pace from the leaves.

    Sounds pretty good, I'm not a shrimp eater but I'd try it with tofu. Thanks for sharing. Do you like WW magazine? I just subscribed after picking up a copy at the store last month.

    I do like it--very commecial--tons of ads for companies that want you to buy all their stuff (I'm not big on processed foods that replace this for that) but there are always good food ideas & some good insperation--I'd will be subscribing again soon.

    I'm not very experianced with tofu, but I bet it would be good--or I was thinking ampin up the legume factor (I love me some legumes). Adding more veg would be great too
