One Dish Recipes?

I find that now that I'm really watching what I eat all I want are one dish meals. Easier to calculate I guess!! So does anyone have any good low cal one dish meals they want to share? Thanks.

    Stir fry chicken and veggies over brown rice. I have a hectic schedule so I'll usually make a bunch of it and just keep reheating. You can make as much or as little as you like. Usually only takes 10-15 mins and its very filling.

    Try to find a copy of "Glorious One-Pot Meals" by Elizabeth Yarnell. Pretty useful book, and some nice simple recipes, too.
