Your Best Vegetarian Chili

Hi everyone! I've never made my own chili before and I really want to try it! What are your favorite veggie chili recipes to make?? I love beans and need to get more protein into my diet so I'm looking for new recipes! I appreciate your help!!

    find a regular chilli recipe and substitute the meat for the boca crumbles (http://bocaburger.com/products/crumbles.aspx?productBox=0) or the morningstar farms (http://www.morningstarfarms.com/products_meal-starters-grillers-recipe-crumbles.aspx) They have a lot of protein with little calories and little fat.

    2 green/red bell peppers, chopped
    2 jalapeno peppers, chopped (I use more because I like it spicy)
    2 (4 ounce) cans chopped green chile peppers, drained
    2 (12 ounce) packages vegetarian burger crumbles
    3 (28 ounce) cans whole peeled tomatoes, crushed
    1/4 cup chili powder (or 2 packets of chili seasoning, you can use mild or hot--I do one of each)
    1 tablespoon ground black pepper
    1 (15 ounce) can light kidney beans, drained
    1 (15 ounce) can dark kidney beans, drained
    1 (15 ounce) can garbanzo beans, drained
    1 (15 ounce) can black beans
    1 (15 ounce) can whole kernel corn

    Dump all ingredients in a slow cooker or crock pot. Turn on high heat. Walk away. :wink: Stir occasionally, and in 2-3 hours you'll have fantastic veggie chili. Enjoy! :drinker:

    Chilli is so versatile..I literally throw anything I have in it :) Cant think of a recipe off the top of my head but I always put in some salsa....I have also tried a quinoa chilli which was good and a pumpkin chilli....

    I make mine with all beans - no meat substitute -

    One can each of chick peas, kidney beans and haricot beans
    2 cans chopped tomatoes
    2 or 3 onions chopped and sauteed
    Fresh coriander/cilantro
    Cayenne pepper, loads of cumin and garlic
    2 chilli peppers
    salt and pepper

    Chuck it all in and done!
