Makes 12:

2 cups of egg whites
4 large eggs
Pepper
A few shakes of hot sauce

Blend the egg mixture.

Grab your muffin pan (I use a silicone pan that I keep seasoned with canola so there's no sticking). Drop about a tablespoon of frozen leafy greens (we use Whole Foods brand) and a half tablespoon of salsa into each cup. Fill with the egg mixture then top with a sprinkle of Parmesan Reggiano. Bake at 350 about 35-40 minutes. Let them cool for about 15 minutes and they pop right out.

You can use whatever veggies you like. Drop a mushroom in, spinach, whatever. Omit the Reggiano. It's not an exact recipe, but no matter what veggies what you drop in the cups, two quiches won't be over 120 calories. This has become my go-to breakfast nearly every single day. And the DH loves them!! I hope you will to!
