Edamame Dip (Edamole)

** I've never made this, but I know several on the site who like Edamame so I though I'd post it. Figure you guys can fiddle with it.

"This dip tastes like guacamole but made with edamame which has more protein and fiber. Serve it just like guacamole with raw veggies, tortilla chips, or pita bread." ALLRECIPES

2 cloves garlic
1 chipotle pepper in adobo sauce
2 tablespoons olive oil
1 teaspoon hot pepper sauce, or to taste
1/2 teaspoon cumin
1 cup frozen shelled edamame (green soybeans), thawed
1 tablespoon water, or as needed (optional)
salt and pepper to taste


Place the garlic cloves, chipotle pepper, olive oil, hot sauce, and cumin into a blender. Puree until smooth, then add the edamame, and continue to puree until smooth. Add water as needed to achieve your desired consistency. Season to taste with salt and pepper before serving.

    Do you have a Sams Club near you? I've been buying it there (in the frozen section) and it comes with little packets of rock salt.. my kids absolutely LOVE it...

    Also, I saw some at Trader Joes...

    Got frozen ones at Costco. My kids love them. They are prepackaged (like 12+ per box) and my daughter and I usually share a package at a time.
