Cauliflower Crusted Pizza Revisited

There are a few threads on here about making Cauliflower Pizza Crust...tonight I had to give it a go.

I was running pretty lean on my remaining calories for the day, so I took the recipe down to basics:

Approx. 2 cups shredded and steamed (in the microwave for ~3 minutes) cauliflower
2 eggs
1/2 cup lowfat shredded mozzarella

Mixed it up, divided in half on parchment paper, flattened each out into a "crust."

Baked at 350 until brown, took about 30 minutes.

Topped with my "quick" pizza sauce (Bertolli Arrabiata sauce with tomato paste to thicken) and 3 tablespoons of grated Parmigiano Reggiano cheese.

Caloriewise, one crust on its own is 119 calories; with the toppings I selected, a total of 215. No, the crust wasn't like a bread crust, but I didn't expect it to be. It worked fine, though, as a substrate for a pizza I didn't beat myself up for eating!!!

(I was going to take a photo and share, but I was so hungry I ate it before I got the camera!)

Plans for the second crust? Diced chicken and low fat homemade pesto sauce!!

    Wow. I think I'll buy some cauliflower tomorrow at the farmer's market. I will give it a try for sure! Thanks for sharing!
