I am accepting any recipes for quinoa or couscous. Anyone have any they want to share?

    Love quinoa!!

    Lemony Lime Black Bean Quinoa

    1 c quinoa
    2 c broth of your choice (I used faux chick'n broth)
    1 can black beans, rinsed
    1 small avocado, diced
    1/2 yellow onion, diced & sauted
    1 t buttery spread
    Juice of 1 lemon & 1 lime
    Zest of half a lemon (about 1/2 t)


    1) Bring broth to a boil, add quinoa, return to a boil; reduce heat, cover, and cook until broth is absorbed (about 12-15 minutes)


    2) Add the rest of the ingredients to the quinoa and combine, taking special care not to smash the avocado.


    3) Enjoy.

    I like to take couscous and mix it with some chopped tomato, cucumber, and toasted pine nuts. Throw some fresh basil in too - totally yummy!!!

    Cous Cous cooked with (and by cooked with I mean added after taken off heat) chopped walnuts, garlic and olive oil. YUM!

    I love quinoa... my bfs sister actually just showed me a simple but really yummy way to have it! If you have leftovers just add lemon and have it cold! It sounds really plain and boring, but its simple and yummy! :D

    Also, I'm def going to have to try these other recipes! Especially the couscous! YUM!

    I've heard you can cut the sodium in the beans by about 40% if you rinse them if that's a dietary concern.

    Any recipe you have for rice works well with quinoa.
    I like to mix it with soy chorizo, fake cheese and top it with avocado slices and cabbage, tortillas are optional.

    I ate quinoa for the first time tonight, and it was deeeeee-licious!!! I found the recipe on allrecipes.com, and pretty much stuck to the recipe except I used olive oil instead of vegetable oil, and chicken broth instead of vegetable. I also never add salt to my food and I only used one can of black beans, cause that's all I had! Oooh, and I added some ground turkey too.......yummo!!!

    Really easy quinoa recipe (if I even dare call it that)..

    1 cup quinoa
    2 cups water
    1 packet chicken bouillon (or 1 cube)

    add all the ingredients to pot, bring to boil, then cover and simmer until water is absorbed. Let sit 5 minutes, fluff with fork and then serve.

    Real quick and easy side dish (kind of like a rice pilaf) with very little added salt. If you like, you could substitute some of the water for an even amount of chicken stock. Also, I've added diced veggies (red pepper is quite nice).

    I've also heard of people doing a quinoa risotto.. but, probably not the healthiest.. :-D

    I like to use quinoa in place of rice with a stir fry. I often get one of those frozen prepared stir fries (Contessa or PF Chang) that you just heat up, and mix cooked quinoa in at the end, before serving. Yes, the frozen variety is high in sodium and fresh homemade would be better, but when you're short on time, these are delicious and lo cal :-)

    CHOCOLATE QUINOA PUDDING

    ¼ cup dry quinoa rinsed (66g)
    ½ cup almond milk (4oz) or light chocolate soy milk will work too
    1 tbsp unsweetened cocoa powder (6g)
    1/2 tsp almond extract
    1 tbsp clover honey (optional)
    Whisk all ingredients in a small pot over medium heat and bring to a boil.

    Lower to a simmer and cover. Cook for about 12 minutes until the quinoa absorbs most of the liquid. Serve!
    Love it cold or warm!!

    As a breakfast cereal cook the grain in apple juice. (I prefer the unfiltered from Trader Joe's) add a tiny bit of almond milk, almond sliver and dried cranberries. spice with a bit of nutmeg

    You cna cut the sodium by buying frozen stir fry veggies instead and add your own seasonings. Try using garlic powder and ginger powder then add 1 tsp soy sauce and 1 tsp water.

    My mom made this a couple of months ago and it was FANTASTIC. I'm going to make it this weekend.


    Moroccan Quinoa Salad




    Step one ingredients:

    1 cup uncooked quinoa (see note below)
    2 cups vegetable broth
    ¼ cup dried currants
    1 tsp medium curry powder
    1 tsp ground cumin
    ½ tsp ground coriander
    1 tsp honey (or sugar)
    ½ tsp salt
    Step one directions:

    Combine all ingredients in a medium pot. Bring to a boil. Reduce heat to low, cover and simmer for about 20 minutes or until all liquid absorbed. Remove from heat. Let stand covered for 10 min. Fluff with fork and leave uncovered to cool completely.


    When quinoa is cool, transfer to large mixing bowl.

    Add step two ingredients:


    1 cup canned chickpeas, drained and rinsed
    ½ cup each finely chopped red bell pepper, grated carrots (packed), diced English cucumber (peeled)
    1/3 cup chopped green onions
    2 tbsp olive oil
    2 tbsp freshly squeezed lemon juice
    2 tbsp minced fresh mint leaves
    Lots of freshly ground black pepper

    Step two directions:

    Mix well and refrigerate for at least an hour or two before eating. Tastes even better the next day!


    Note: To save time, look for quinoa that says "pre-washed" or "pre-rinsed" on the package. Quinoa must be rinsed before using to remove the bitter outer coating. If you buy quinoa that isn't pre-rinsed, put it in a mesh strainer/sieve and run cold water over it for about 30 seconds.

    QUINOA MEXICAN SALAD

    2 tbsp extra virgin olive oil
    2 tbsp fresh squeezed lime jiuce
    2 tbsp chopped fresh cilantro
    1/2 Cup sliced scallions
    1 1/2 cups corn
    2 chopped tomatoes
    1 (15 oz) can black beans, drained & rinsed
    2 cups cooked quinoa (warm, cold or room temp)

    add olive oil, lime juice & chopped cilantro to cooked quinoa.
    then add sliced scallions, corn tomatoes & black beans.
    if you like, top with salsa, shredded cheese or a few slices of avocado.

    Fruited mint couscous
    Prepare the couscous using orange juice instead of water 2/3 cup couscous to 1 and 1/3 cups juice
    Stir in some fresh or dry chopped mint leaves and some ginger either fresh or chopped fine
    Stir in chopped mixed fresh fruit
    I use strawberries, plums peaches blueberries etc about 4 cups
    Leave until cold or not:smile:

    CRANBERRY WALNUT QUINOA SALAD

    1 CUP RAW QUINOA, RINSED WELL IN COLD WATER
    1 CUP DRIED CRANBERRIES
    1 CUP FROZEN GREEN BEANS, DEFROSTED
    1/4 CUP WALNUTS CHOPPED
    1/4 CUP GREEN ONIONS SLICED
    1/4 CUP BALSAMIC VINEGAR
    1 1/2 TBSP EXTRA VIGIN OLIVE OIL
    4 CLOVES GARLIC MINCED
    1/2 TSP SALT
    1/4 TSP PEPPER

    COMBINE QUINOA WITH 2 CUPS WATER IN A MEDIUM SAUCEPAN & BRING TO BOIL OVER HIGH HEAT.
    REDUCE HEAT TO A SIMMER, COVER, & CONTINUE COOKING UNTIL ALL WATER IS ABSORBED.
    IN A MEDIUM BOWL COMBINE COOKED QUINOA, DRIED CRANBERRIES, GREEN BEANS, WALNUTS & GREEN ONIONS UNTIL WELL MIXED.
    IN A SMALL BOWL WHISK THE BALSAMIC VINEGAR, OLIVE OIL, & GARLIC UNTIL WELL BLENDED. POUR OVER THE QUINOA MIXTURE. TOSS UNTIL WELL BLENDED. SEASON WITH SALT & PEPPER TO TASTE.
    CHILL IN THE REFRIGERATOR FOR AT LEAST 30 MINUTES BEFORE SERVING.

    QUINOA SALAD WITH APPLES & ALMONDS

    1 cup quinoa rinsed
    2 cups water
    2 tbsp honey
    1/4 cup lemon juice
    1/2 tsp coarse salt
    3 tbsp olive oil
    1 cup peeled diced tart apples (like granny smith)
    1 cup finely chopped celery
    1/3 cup golden raisins
    1/3 cup finely chopped parsley
    1/2 cup coarsely chopped almonds toasted
    course salt & pepper

    in a medium saucepan combine quinoa & water. bring to boil. reduce heat to simmer, & cover, until water is absorbed. (about 15 minutes) transfer quinoa to a large bowl, stir & let cool completely.

    in a small bowl, whisk together the honey, lemon juice, & salt. gradually whisk in the oil until blended.

    add the apples, celery, raisins, parsley & almonds to the quinoa & toss the ingredients well. add the dressing & toss once more to coat the salad. season it with salt & pepper to taste. serve at room temp.

    serves 6-8

    LEMON-SCENTED QUINOA SALAD

    1 cup quinoa
    2 cups water
    1/2 tsp fine grain sea salt
    1 can garbanzo beans or dried equivalent
    1/2 cup cilantro chopped
    1/2 red onion chopped

    Tahini Dressing:
    1 garlic clove smashed & chopped
    1/4 cup tahini
    zest of 1 lemon
    scant 1/4 cup fresh lemon juice
    2 tbsp olive oil
    2 tbsp hot water
    scant 1/2 tsp fine grain sea salt

    rinse the quinoa in a fine-meshed strainer. in a medium saucepan heat the quinoa & water until boiling. reduce heat & simmer until water is absorbed & quinoa fluffs up, about 15 minutes. quinoa is done when you see the curlique in each grain & its tender with a bit of pop to each bite. drain any extra water & set aside.

    while the quinoa is cooking make the dressing. whisk together the garlic, tahini, lemon zest & juice, & olive oil. add the hot water to thin a bit & then the salt.

    toss the cooked quinoa, beans, cilantro, red onions & half of the dressing. add more dressing if you like & season with more salt to taste. serve garnished with a bit of cilantro.

    serves 4

    Quinoa topped with homemade chicken and black bean chili, a dollop of plain greek yogurt, and a sprinkle of lowfat cheese. So filling and the perfect cold weather food!
