What to do with Ricotta cheese?

I have some leftover low-fat ricotta cheese from a recipe I made earlier this week, anyone have suggestions on what to do with it?

By the way, if anyone is interested, this is the recipe I used it in, it was delicious! Just like chicken parmesean!

    I use it to make Manicotti, Baked Ziti, or as a topping to any italian-style meat.

    lasagna!! use vegies instead of ground beef (squash, mushrooms, red peppers, asparagus, ect) mix the ricotta with low fat mozzarella, an egg, and italian seasoning. layer sauce, noodles, sauce, vegies, cheese mixture, sauce, noodles, sauce, vegies, cheese mixture, sauce, noodles, sauce. It's so good ;)

    The recipe i made was awesome you should definitely try it! Now my big question.....where do I get these noodles? It says the Kroger near me has them, but I've looked in the health section where the regular tofu is and I can't find them! What section of the grocery store are they found in? I've been wanting to try them for ages!

    Manicotti is my FAVORITE and great when paired with whole wheat shells and homemade red sauce ;D

    I find them in Tofu section of my local grocery stores.. Safeway &Whole Foods. They are hard to miss; small bags with water & noodles. But, you can just use the pesto sauce on whatever pasta you like or put over some lean protein.
