Sweet'n'Sour/Buffalo Chicken Lunch Boxes (pics)
Today's lunches were kinda split. My hubby likes hot and spicy stuff while my tummy just can't handle that kind of thing anymore. Plus he was tired of salad and didn't want any for lunch today but I love salad! And avocados were on sale but my hubby doesn't like them.
Buffalo - 310 Calories
Sweet'n'Sour - 450 Calories
1 Large (6oz) Boneless Skinless Chicken Breast
1 Tbl Chicken Breading (I used Andy's Seasoning, mild)
1 cup White Rice, cooked
1 cup Romaine Lettuce, chopped
1/8 cup Parmesan Cheese
1/2 Avocado
1 Stalk of Celery
2 Medium Carrots
1 1/2 cups Broccoli Florets
1/2 Tbl La Choy Sweet'n'Sour Sauce
1 Tbl Louisiana Wing Sauce
2 Tbl Fat Free Ranch, divided
1/2 Tbl Extra Virgin Olive Oil
Chop the chicken breast into bite sized pieces. Gently roll in chicken breading and pan fry with olive oil until cooked through, about 6-8 minutes. Toss together romaine, parmesan and half the ranch dressing. Slice the celery and carrots into sticks. Slice the avocado and sprinkle with lemon juice, salt & pepper if desired.
In the buffalo box, put buffalo sauce, the rest of the ranch, all the celery sticks, half the carrot sticks, 1/2 the broccoli, 1/2 cup of rice and 2/3 of the chicken.
In the sweet'n'sour box, put sweet'n'sour sauce, romaine salad, half the carrot sticks, 1/2 the broccoli, 1/2 cup of rice, avocado, and 1/3 of the chicken.

Yes I've just started posting them in the last couple weeks. Usually 2-3 lunch boxes a week. I try to keep them 500 calories or less but sometimes there are days where I have planned a bit higher. Not sure if there would be interest in those ones ~_^
