Low Calorie Corn Muffins
If you're anything like me you love a good corn muffin in the morning, but don't love the 150-200 calories that come with it! So as I was craving corn muffins this morning I came up with this delicious recipe, it's very good and very easy!
1 Cup Yellow Corn Meal
1/2 Cup All Purpose Flour (i'm sure whole wheat would be great too!)
1/4 teaspoon 0 calorie sweetner (or regular sugar, whichever you prefer)
1 tablespoon baking powder
1 and 1/4 cup milk (I used 1% but i'm sure skim would be just as good)
1/3 cup applesauce (or plain yogurt would work)
1 egg
Mix Wet
Mix Dry
Combine
Bake at 350 degrees for 20-30 minutes dependent on your oven
Enjoy!

Yep! I put it in the MFP database and the recipe makes 12, 75 calorie muffins! And i'm sure if you used skim milk it would be even less0 -

I'd just like to add that i just te one of these with about half a tablespoon of whipped butter, and half a grapefruit and i'm STUFFED!
This ended up being a very filling 160 calorie breakfast for me!0 -

Made it the other day. Probably one of the worst recipes I've ever made (no offense intended).
I shared it with four other people and they all hated it as well. I followed the directions exactly!!
1/4 tsp is very little sugar/sweetener, I wonder if that is the right amount??0
