Gourmet Shrimp Salad - 241 calories!
Threw this together for lunch today - YUM YUM YUM!
- 2 cups Fresh Express 50/50 Baby Spinach / Spring Mix
- 1 tsp olive oil
- 1 tsp red wine vinegar
- 8 peeled, deveined shrimp - light sprinkle of Tony Chachere's Original Creole seasoning - quick sautee in skillet with a spray of Pam so they don't stick
- half of a granny smith apple, thinly sliced
- half an ounce of toasted walnuts

Protein 14
Fat 15 (but all good fats from olive oil and walnuts)
