Dijon Chicken

Serves 2

ingredients:
1/4 cup low sodium, lowfat chicken broth
1/4 cup dry white wine **
1/2 large onion, finely chopped
1/3 cup Country Dijon mustard (with mustard seeds)
1/3 cup Dijon mustard (without seeds)
3 garlic cloves, pressed or chopped
1 tbsp fresh thyme leaves
1 lb cut up chicken breasts (kebab-size chunks)


Combine all ingredients but chicken in heavy large skillet. Bring to gentle simmer over medium-low heat. Add chicken chunks and season lightly with pepper (to taste). Stir to coat chicken, cover and poach until chicken is just cooked through (check after 5-6 minutes). Remove chicken and set aside. Boil Dijon sauce until reduced to sauce consistency, about 2-4 minutes. Pour sauce over chicken and serve.

** if you don't have white wine or prefer not to cook with it, double the amount of broth.
