suggestions for leftover grilled chicken breasts

i have 3 large grilled leftover chicken breasts. would love some different suggestions on what to do with them for supper tonight.

my fav salad is chicken, mango and goats cheese salad with cashew nuts - its yum!!
nice cruncy lettuce, with chunks of chicken, chopped mango and a nice goats cheese with cashew nuts sprinkled on the top. Altogether the tastiest salad i've ever had0 -
use for breakfast mix it in some eggs and bit of low fat cheese for dinner in a rice dish or lettuce wrap0

Take egg whites and a little cheese. Omelette!

Dice them up, and heat with sauteed peppers and onions. Put meat and veggie mixture in a pita with green leaf lettuce, salsa and a bit of cheese. Makes a darn good chicken fajita pita!0

I just made a honey balsamic marinade for grilling....2 tbs. of balsamic, 1 tbs of honey, and 1/4 cup of olive oil. Grill it up and throw it in a salad...sooo good!!0

Pair it with brown rice or sweet potato and some veggies or salad. Or cut them up and put them IN a big salad. Or make chicken salad sandwiches (though that last one sounds more lunchy than dinnery). Left over grilled chicken is usually delicious, but if it's too bland for some reason, a little hot sauce makes it better.0

You could make a faux parmagiana - spread some tomato pasta sauce (or canned tomatoes mixed with herbs) over the chicken, top with a little reduced fat cheese and bake0

Grill a whole red pepper on the grill medium heat for 2omins turning every few mins. Outside should get charred but not broke through. keep grill cover closed when not turning. Take out after 20 mins and let steam in covered bowl for about 15mins, then peel outside skin off, scoop seeds out and cut into big slices........ layer pepper on grilled chicken, then top with low sodium mozzeralla cheese! Add a side of veggies, salad or oven roasted potatoe or baked potatoe on side. You could also use the layered chicken on ciabatta bread as a sandwich.0

Leftover Grilled Breasts....Let's see...Usually I would say Dice it up and make some salads...which is delish..or add some BBQ sauce and make a "manly" salad ingredient...or my new favorite...FAJITAS!!!!!! Make them any way you want..I suggest grilled onions, peppers, sour cream, and guacamole with the chicken all on a fajita..wrap it....ENJOY!0

want to thank everyone for the responses - it's so hot here that I think we're going to use some of these ideas for meals after I cook up a batch of chicken breasts to throw in the fridge. Dang it's hot!0
