my fave granola bars

My neighbor makes these and brings me big batches...i freeze them and it's a treat once a week...sooooo good!
1/2 C whole weat flour
1/2 C peanut butter
1/2 C splenda brown sugar mix
1t cinnamon
1/2 t. baking soda
1/8 t. salt
1/3 C honey
1 large egg
2 egg whites
2 T oil of choice
1/2 C walnuts
1 C raisins
2 C. old fashioned oats
1/2 c of choc chips (if desired)
Preheat oven to 350 spray 9x13 pan with non stick spray. Whisk dry ingredients in small bowl with mixer. Blend eggs in small bowl with fork add to peanut butter mixture with oil. Beat until smooth. Add flour mixture and mix with spatula. Mix in oats, walnuts, raisings and choc chips. Scrape batter into pan and pad down evenly with wet spatula.
Bake 20-25 minutes until lightly brown and firm to touch. Cool completely in pan on rack before cutting into 24 bars.
Per 2x2 serving:
175 calories
8 gm fat
24 gm carbs
4 gm protein
2 gm fiber
9mg cholesterol
68 mg sodium
