Luxurious food?

Sometimes I crave something that is luxurious. I have a few recipes that SEEM rich but are not too big of a calorie hit. I'll bet you do, too. I'd love to hear some of them. Here is one of mine, and it is easy too!

Shrimp Omlette

2 tsp. Challenge Butter - Tuscan Style With Canola & Olive Oil
2 Extra large whole eggs
3 oz. Cooked shrimp (prepared without oil)
2 wedges Laughing Cow - Light Garlic and Herb Cheese

This is delicious with a very rich “mouthfeel” even though it is only 380 cal. It is flavorful and easy to make, thanks to the seasoning in the butter and the cheese wedges. If you are REALLY hungry, add 2 egg whites and double the shrimp (to 6 oz) for just 140 cal more.

Great breakfast, but it also makes a fantastic lunch or supper with an added green salad and a glass of V8 juice.
