looking for a veggie smooth/drink?

The title pretty much says it, I have a vitamix blender. I love that thing. I want to incorporate more vegetables in to my diet... Anyone have any recommendations...

    oooo vitamix! nice...I have a blendtec, which is also super amazing. I'm into the 'green smoothies'......had one last night that was about 4cups of mixed baby greens, pomegranate/blueberry juice, water, flaxseed and yogurt........love love love

    green blast smoothie

    4 cups packaged fresh baby spinach leaves
    2 cups seedless green grapes
    1 medium banana, cut up
    3/4 cup seeded, chopped green sweet pepper
    1/2 cup unsweetened apple juice
    1/2 of a medium jalapeño pepper, seeded, optional

    directions
    In a blender or food processor combine spinach, grapes, banana, sweet pepper, apple juice, and jalapeño, if using. Cover and blend or process well. Mixture will be slightly pulpy but should be nearly smooth. Makes: 4 (6-ounce) servings



    carrot apple smoothie

    3 medium carrots, peeled and sliced (1-1/2 cups)
    3/4 cup boiling water
    1-1/2 cups apple juice

    directions
    In a small saucepan cook carrot, covered, in the 3/4 cup boiling water about 20 minutes or until very tender. Cool. Transfer carrots and cooking liquid to blender container. Add apple juice. Cover; blend until carrot is smooth. Add additional apple juice to make of desired consistency. Chill. Makes 3 (3/4-cup) servings.



    broccoli blueberry smoothie

    ■1 cup of frozen blueberries
    ■1/2 cup of steamed broccoli
    ■1 cup of 100 percent cranberry juice
    ■1/2 cup of low-fat plain yogurt
    Blend and combine to make 1 smoothie. Add strawberries or blackberries for an additional burst of nutrition.


    tomato smoothie

    ■2 cups (chopped) tomatoes
    ■1/2 cup tomatoe juice
    ■1/4 cup apple juice
    ■1/2 cup carrots
    ■1/4 cup (chopped) celery
    ■Tabasco or hot sauce to taste
    ■2 cups ice



    mixed fruit smoothie

    •1 banana
    •½ cored apple (not peeled)
    •1/3 cup frozen blueberries
    •1 cup frozen strawberry
    •2 fresh kale leaves, or 1 cup frozen kale greens
    •½ cup yogurt
    •1 cup low-fat milk or water
    Add all ingredients to the blender. Puree or set on frozen drink setting until well blended. If the mixture is not blending, turn off the blender and use a long handled spoon to mix the ingredients. Do not put the spoon in the blender while the blades are moving. If the smoothie seems too thick, add more milk or water, ¼ cup at a time, until the mixture is a desired thickness.

    I don't do it so much anymore, but I used to do the green smoothies, too. I'd just add spinach to my protein shake. Now, I tend to do "carrot cake" smoothies:

    vanilla protein powder
    any milk you prefer (I like almond)
    1 large carrot, diced
    1/2-1tsp cinnamon
    ice

    It's really yummy! I have also done tomato juice, celery, cucumber and romaine lettuce for a very fresh-tasting smoothie, and I am going to try making a "sweet potato pie" smoothie with vanilla protein powder and mashed sweet potato + cinnamon and almond milk this week. I know I'm completely insane, but I do hope this helps.
